Ingredients
- 1 multigrain flour tortillas , 10 inch
- 1 tablespoon hummus
- 1 grilled chicken breast , 4 ounce
- 2 medium roasted red peppers , drained
- 2 tablespoons crumbled reduced-fat feta cheese
- 1 cup baby spinach leaves , or to taste
- cooking spray
Instructions

Heat a panini maker.

Lay tortilla on a work surface and spread with hummus. Top with sliced chicken, red peppers, feta cheese, and then spinach. Fold tortilla in half and spray with cooking spray.

Grill in the preheated panini maker until outside is golden brown, 6 to 8 minutes.

This is my first attempt ever at this incredibly unique and delicious Sicilian stuffed flatbread (scacce Ragusane) recipe. What we have here is a very familiar pizza-like flavor profile, but the delivery system is unlike anything you've ever experienced. The outside edges are crispy and crunchy while that saucy and cheesy center is much like pasta in texture. So, while this is vaguely similar to a lot of things, it's really unlike anything else.
