This easy and simple recipe makes three bottles of a favorite coffee-flavored liqueur! It tastes wonderful, too. The longer it's stored, the smoother the taste.
Ingredients
- 5 cups water
- 3 cups white sugar
- 0.25 cups instant coffee granules
- 1 bottle rum , 750 milliliter
- 2 teaspoons vanilla extract

Stir the water, sugar, and instant coffee together in a saucepan over high heat until the sugar dissolves and the mixture boils. Remove from the heat, and cool 30 to 45 minutes. Stir in the rum and vanilla. Using a funnel, pour into 3 clean wine bottles. Seal, and store in a dark, cool place at least 2 weeks before drinking.

Chicken in Lemongrass Coconut Broth
I made this soup after trying it at a Thai noodle house in my area. I just kept playing around with ingredients until I got something similar. I have the seasonings adjusted to my liking, however there is an adjustment guide in the footnotes if you would like a slightly different flavor. This soup is also good with rice or pasta, but ramen seems to be the favorite. You can use any flavor of ramen noodles.
