Jalapeno Popper Mushrooms
My husband loves stuffed jalapeños and I like stuffed mushrooms, so I came up with this jalapeño popper mushrooms recipe that combines the two. Leave some of the seeds or ribs in the jalapeño for more heat! I like to use Neufchâtel cheese and turkey bacon for a lower fat version — it's just as tasty!
Butternut Curry Soup
Combine the complex flavors of curry with seasonal butternut squash to create a soup that is perfect on your holiday table or for any cold weather meal.
Saucy Stuffed Peppers
My Slovakian grandmother always made huge pots of stovetop stuffed peppers in winter. I'm a vegetarian now and can safely say that this is the one dish that I really miss eating.
