This no-sugar coleslaw is a classic, doused in a vinegar and mayonnaise dressing.
Ingredients
- 1 tablespoon distilled white vinegar
- 1 cup mayonnaise
- 2 tablespoons prepared Dijon-style mustard
- 3 cups shredded cabbage
- 3 cups shredded red cabbage
- 1 cup grated carrot
- 0.5 cups shredded green bell pepper
- 0.5 cups shredded rell bell pepper
- 0.5 cups shredded celery

In a small bowl combine vinegar, mayonnaise, and mustard.

In a large bowl combine cabbage, carrots, bell peppers, and celery.

Pour dressing over vegetables, mixing evenly to coat. Chill and serve over lettuce leaves.

It's light and fluffy and just the right sweetness. It's the type of frosting found in most high-end gourmet pastry shops. You will need a candy thermometer for this recipe. Makes enough to generously frost a two-layer 9-inch round cake.
