This honey syrup is a great syrup for pouring over gingerbread, but it is also wonderful in cocktails, on pancakes, waffles, or almost anything!
Ingredients
- 1.5 cups honey
- 0.5 cups water
- 0.25 cups fresh lemon juice
- 0.5 teaspoons grated lemon zest

Combine honey, water, lemon juice, and zest in a small saucepan. Cook over medium heat, stirring occasionally, until boiling. Continue to boil until mixture thickens and is reduced by a fourth.
