This horchata recipe is simple to make and you can adjust the amount of sugar to suit your taste. Serve over ice for a refreshing rice-based drink everyone will enjoy.
Ingredients
- 5 cups water
- 1 cup uncooked white long-grain rice
- 0.67 cups white sugar
- 0.5 cups milk
- 0.5 tablespoons vanilla extract
- 0.5 tablespoons ground cinnamon

Pour water and rice into a blender; mix until rice begins to break up, about 1 minute. Let rice and water stand at room temperature for at least 3 hours.

Strain rice water into a pitcher and discard rice. Stir in sugar, milk, vanilla, and cinnamon.

Easy White Chili II
A long-time Wellington, Ohio friend shared this recipe with me and has become an all-time favorite. Serve with a dollop of sour cream and salsa. You can brown the chicken in a skillet first if you prefer. I have found it makes little difference.
Blinis
These are not the canape-sized blini, but larger pancakes that are filled with a simple but hearty beef and onion mixture. The flavor comes from the generous amount of onion and frying the mix well, at least 10 minutes.
Peppermint Buttercream Frosting
An easy, mint-flavored frosting. You can substitute 4 to 6 tablespoons creme de menthe syrup for the peppermint extract and milk, if desired.
