We had this at the New York State Fair. When we saw the sign for Hot Beef Sundae, we were curious. Really, it looks just like a hot fudge sundae and when we got home we made our own version.
Ingredients
- 2 cups leftover mashed potatoes
- 2 cups roast beef with gravy
- 1 cup shredded Cheddar cheese
- 0.5 cups sour cream
- 4 cherrys tomatoes
Instructions
-
1
Pile mashed potatoes in each serving bowl to resemble a scoop of ice cream. Top with roast beef with gravy to resemble hot fudge.
-
2
Sprinkle on Cheddar cheese. Dollop sour cream for the "whipped cream," on top. Garnish each sundae with a cherry tomato.

Aaron's Famous Vegetarian Nachos
These vegetarian nachos are very satisfying and crave-worthy! My husband (the recipe creator) uses refried beans, jalapeño salsa, and pepper Jack cheese, but you can add your favorite toppings or whatever you like. Also good topped with sliced pepperoncini or diced jalapeño.
