These hot Reuben roll ups are flour tortillas filled with Swiss cheese, corned beef, sauerkraut, and thousand island dressing, then toasted in a skillet. For a quick lunch or light supper, these are ideal.
Ingredients
- 4 flours tortillas
- 10 slices Swiss cheese
- 0.75 cups sauerkraut
- 0.5 cups thousand island dressing
- 0.75 pounds corned beef
- 2 tablespoons butter

Arrange tortillas on a work surface. Lay 2 1/2 pieces of cheese across the bottom third of each tortilla and top evenly with sauerkraut. Drizzle each with 2 tablespoons of dressing over the kraut and top evenly with corned beef. Starting at the bottom, roll each tortilla tightly.

Working in batches if necessary, heat butter in a large skillet or grill pan over medium heat. Add roll ups, seam side down, and cook until golden and toasted. Flip and repeat until toasted on all sides and cheese has melted.

Cut each wrap into 3 pieces and serve with additional dressing if desired.
