Stir together onion and ketchup in a medium bowl until onion is thinly and evenly coated. Mix in lemon juice. Stir in sugar, cilantro, fenugreek, chili powder, and salt until well combined. Cover and chill in the refrigerator for 24 hours to let the lemon juice neutralize the onion flavor slightly.

Escarole and Beans
This escarole and cannellini bean dish has a rich and creamy flavor. It's also best served with warm crusty Italian bread.
Fish in Foil
Baked fish in foil is a "no-smell" fish recipe, and the only one I make for my family (I hate fish, they love it!). Take foil packets to the table for service, and keep the packets around for wrapping and discarding bones and skin. Then when dinner's done, haul those babies to the outside trash.
Cajun Shrimp and Sausage Sheet Pan Dinner
You might call this Cajun shrimp and sausage sheet pan dinner a shrimp boil without the water, or maybe a gumbo without the roux. With so many vegetables, a simple green salad will complete this dinner nicely, along with some crusty French bread.
