Make the best mashed potatoes you've ever tasted with this quick and easy recipe. The cream cheese makes them extra velvety, a trick I picked up from my brother Mike.
Ingredients
- 6 russets potatoes , peeled and cut into chunks
- 0.25 cups cream cheese
- 1 tablespoon cream cheese
- 0.25 cups milk
- salt and ground black pepper to taste

Place a steamer inside a multi-functional pressure cooker (such as Instant Pot). Add 1 cup water to the pot. Place potato chunks into the steamer. Close and lock the lid. Select Rice function and set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.

Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove lid. Add 1/4 cup plus 1 tablespoon cream cheese and milk to the pot and mash using an electric hand mixer or a potato masher. Season with salt and pepper.

White Wine Chicken Soup
Amazing, fill-your-house-with-an-aroma-to-drool-for, easy chicken soup. The longer it cooks, the better it gets. The best is made by my mother, but the rest of us can make this wonderful facsimile. Easily multiplied, exceedingly flexible - have fun! The soup is quite good after 2 hours, but the longer it cooks, the more mellow the flavor will be. If you can, leave it for as many as 6 hours (this is a good recipe when you're in the house all day). Serve with croutons or soup nuts, if desired.

This is so easy to prepare and everyone raves about it. The best part is that you can put it together the night before and just pop it in the oven the next morning. Delicious!
