This salad I grew up on. Flavored with extra-virgin olive oil and fresh chopped oregano.
Ingredients
- 4 tomatoess on the vine , cored and chopped
- 0.5 reds onion , thinly sliced
- 0.5 seedlesss English cucumber , chopped
- 3 tablespoons extra-virgin olive oil , or more if needed
- 1 tablespoon chopped fresh oregano
- salt and ground black pepper to taste

Mix tomatoes, red onion, cucumber, olive oil, oregano, salt, and black pepper together in a bowl; stir to coat. Let sit for 30 minutes to blend flavors.

Busy Day Chicken Rice Casserole
This is my family's favorite one dish meal - mine too, since it is so easy to put together! I use skinless, boneless chicken breasts but mixed chicken pieces can be used, too. I also use the low fat, low sodium canned soups and the taste is still great!
