Perfect as a side dish for brunch or dinner, this creamy and crunchy hash brown casserole always fits the bill.
Ingredients
- 1 can Campbell's® Condensed Cream of Mushroom Soup , 10.75 ounce
- 1 container sour cream , 8 ounce
- 0.5 cups butter or margarine , melted
- 1 package frozen hash-brown potatoes , 32 ounce
- 1 medium onion , chopped
- 1 package shredded Cheddar cheese , 8 ounce
- 1 pinch Ground black pepper
- 0.5 cups crushed corn flakes

Mix soup, sour cream, butter, potatoes, onion, cheese and black pepper to taste in 3-quart shallow baking dish. Sprinkle corn flakes over potato mixture.

Bake at 350 degrees F for 45 minutes or until hot.

I adapted this roasted beet and potato soup recipe from a vegetarian soup when my twin toddlers went through a soup-only phase. They love it, and luckily, the rest of the family enjoys it too! It's a nice, hearty purée that is super-easy, especially if you roast the potatoes and beets beforehand.
