If you don't love asparagus, this will bring you into the fold. It's fantastic.
Ingredients
- 2 cups water
- 2 bunches asparagus , trimmed and cut into 1 inch pieces
- 2 tablespoons vegetable oil
- 24 large fresh shrimp , peeled, deveined and cut in half lengthwise
- 2 teaspoons chopped fresh ginger root
- 3 tablespoons soy sauce
- 2 teaspoons granulated sugar
- 1 teaspoon dry sherry
- salt to taste

In a medium saucepan, bring two cups of water to a boil. Cook asparagus in boiling water for 3 minutes. Drain, reserving 2 tablespoons of liquid.

Heat the oil in a skillet over medium-high heat. Saute the shrimp pieces until the color changes, about 3 to 5 minutes. Stir in asparagus with reserved liquid , and season with ginger, soy sauce, sugar, sherry and salt to taste. Continue to cook for 5 more minutes.

Turkey Reuben Burgers
I'm not a big fan of turkey burgers, but finding ground turkey on sale and some on-hand ingredients inspired this recipe. Most of the ingredients can be substituted or exchanged based on taste. Don't let the few ingredients in the burger itself fool you....it's got lots of flavor for a turkey burger. Feel free to add 8 oz. or more sliced mushrooms to the onions when cooking, if you happen to be a mushroom lover. This is great with sweet potato fries and/or a spinach salad. Serve with additional thousand island dressing for dipping.
Curry Pineapple Fried Rice
This is my version of a pineapple and curry fried rice dish served at my favorite Thai restaurant. You might think that the flavors of curry and pineapple wouldn't go together, but they do.
Cream Cheese Bread
This rich yeast bread is excellent toasted and served with jam. It is a good base for making fruit bread or chocolate chip bread; just add 1/4 cup nuts, dried fruits, or chocolate chips after the first rise.
