A cool seafood salad for those hot summer days. It's a real treat for potlucks. Use your favorite pasta. Chopped celery or Vidalia onion may be added if desired.
Ingredients
- 1 package spaghetti , 16 ounce
- 4 hard-cooked eggs , chopped
- 1 carrot , grated
- 0.5 cups frozen petite peas , thawed
- 1 cup frozen fully cooked salad shrimp , thawed
- 0.5 cups crab meat , cooked
Instructions

Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and add pasta to a large bowl. Stir in eggs, carrots, peas, shrimp, and crab meat. Cover, and refrigerate.
-
2
To make dressing, stir together mayonnaise, milk, lemon juice, and sugar. Season to taste with salt, pepper, and paprika.
-

Mix dressing into chilled pasta, stirring until well combined. If the salad seems dry, stir in more mayonnaise and a splash more milk or water. Cover, and chill before serving.

You'll never again buy a ham spread product after trying these deviled ham sandwiches. Use your mini chopper or food processor to whip up a large or small batch of the deviled ham. The recipe can easily be modified for your personal taste, but try it once as written — it's delicious and low-fat too! Add a thin coat of mayonnaise and butter pickles to your sandwich if desired.
Asian-Inspired Ginger Dressing
Whenever I go to an Asian restaurant, I love the house salad dressing. This recipe was inspired by that, but it is not an exact copy. It also is NOT an authentic Asian recipe.
