Kelli's fried green zucchini recipe is just like fried green tomatoes, but with zucchini instead.
Ingredients
- 0.5 cups seasoned bread crumbs
- 0.5 cups grated Parmesan cheese
- 1 teaspoon garlic salt
- 2 large eggs
- 5 tablespoons olive oil
- 1 zucchini , cut into
- 1 cup shredded mozzarella cheese
- 1 cup prepared spaghetti sauce , Optional

Combine bread crumbs, Parmesan cheese, and garlic salt in a shallow bowl. Beat eggs in a separate shallow bowl.

Heat oil in a large skillet over medium heat.

Dip zucchini slices into egg, then press into bread crumbs. Add zucchini in a single layer to the skillet; cook until golden brown, about 3 minutes. Flip; cook other side until tender and golden brown. Sprinkle mozzarella over zucchini; cook until cheese melts, 1 to 2 minutes more.

Spoon sauce onto plates; top with zucchini slices.
