Sweet, salty, cool and crunchy, this salad is a great addition to any family buffet.
Ingredients
- 1 package lemon flavored Jell-O® mix , 3 ounce
- 1 package lime flavored Jell-O® mix , 3 ounce
- 4 cups boiling water
- 1 tablespoon apple cider vinegar
- 2 stalks celery , finely chopped
- 0.5 cups chopped pimento-stuffed green olives
- 2 carrots , peeled and grated

Gather the ingredients.

In a large bowl, stir together the lemon gelatin mix, lime gelatin mix, and boiling water until gelatin has dissolved. Stir in the apple cider vinegar, cover, and refrigerate for about 1 hour to thicken.

When the gelatin is thick but not set, stir in the celery, olives, and carrot so they are evenly dispersed throughout.

Pour into a 1 quart mold and refrigerate until firm, at least 3 hours. To serve, unmold onto a plate.

Custard Buttercream
Custard buttercream (German buttercream) is a very rich buttercream icing made with the addition of custard. You can change it up by adding different flavors or liquor. This is my basic time-tested recipe for decorating cakes and cupcakes. Makes enough buttercream for one 3- to 4-layer cake or 24 cupcakes.
Rhubarb Pineapple Chutney
This is a great way to use rhubarb and goes really well with pork. Also yummy on crostini with goat cheese; simply brush sliced baguette with olive oil and bake at 400 degrees F until golden brown, spread with goat cheese, and top with the chutney. Delicious! Another great use for the rhubarb chutney is as a topping for pork chops. Season chops (or pork tenderloin) with a mixture of even parts cumin, coriander, garlic powder, and salt, plus a sprinkle of cayenne; grill, then serve with the chutney. It gets raves every time!
Fresh Fruit with Poppy Seed Dressing
Any fruit can be used, but this is my favorite combination. Try your own creation, but if you wish to use oranges and grapes in the same recipes, DON'T add the oranges until ready to serve or the grapes will be extremely bitter.
