Another creative way to use up turkey and gravy leftovers! All the flavors of America's favorite eating holiday in a twice-baked potato. Serve with a green salad, and you have a meal.
Ingredients
- 4 large baking potatoes
- 1 tablespoon canola oil
- 0.5 cups butter , melted
- 0.5 cups leftover gravy
- 0.5 cups cream cheese
- 0.5 teaspoons sea salt
- 0.5 teaspoons ground black pepper
- 1.25 cups shredded Cheddar cheese , divided
- 1 cup chopped cooked turkey
- 1 cup chopped leftover stuffing
- 2 greens onions , thinly sliced

Preheat the oven to 400 degrees F (200 degrees C).

Place potatoes on a baking sheet; rub with canola oil.

Bake in the preheated oven until easily pierced with a knife, about 1 hour. Reduce oven temperature to 350 degrees F (175 degrees C).

Cut potatoes in half lengthwise. Scrape flesh into the bowl of a stand mixer, being careful not to tear skin. Leave a small rim of flesh in skin intact. Place hollowed-out potato skins back on the baking sheet.

Beat together melted butter, gravy, cream cheese, salt, and pepper into potato flesh in the mixer on low speed until well combined. Add 1 cup Cheddar cheese; mix for a few seconds. Remove the bowl from the stand mixer; fold in turkey, stuffing, and green onions using a spatula.

Fill potato skins with turkey mixture. Sprinkle remaining 1/4 cup Cheddar cheese on top.

Bake in the preheated oven until warmed through, about 15 minutes.

Baked Cream Cheese Jalapeño Poppers
I made these cream cheese jalapeño poppers after a number of unsatisfactory attempts at making deep-fried poppers. I modified a recipe by Emeril and came up with this. It's much easier than frying, and everyone in our family agrees they're at least as good as (if not better than) any fried poppers they've had! We love hot peppers and always make this recipe with the ones we grow in our garden every year.
