These mashed potatoes with horseradish seem to go well with German-inspired dishes.
Ingredients
- 5 potatoes , peeled and quartered
- 2 tablespoons unsalted butter , divided
- ground black pepper to taste
- 0.5 cups sour cream
- 1 tablespoon prepared horseradish
- 2 teaspoons minced parsley

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain; return potatoes to pot.

Off heat, mash potatoes with 1 tablespoon butter and black pepper. Stir in sour cream, horseradish, and parsley. Whip potatoes and place in a serving bowl.

Melt remaining 1 tablespoon butter; pour over potatoes and serve immediately.

Spicy Red Bell Pepper Soup
I love this spicy soup recipe because it uses fresh, sweet red bell peppers, as opposed to roasted red peppers. It's full of other fresh vegetables and thyme, too, and it freezes exceptionally well. Rice is used as the thickening agent, rather than cream. If you don't like a lot of spice, reduce the amount of cayenne and red pepper flakes.
