This meringue is wonderful. It doesn't get weepy, and has such a good vanilla flavor.
Ingredients
- 0.5 cups water
- 2 tablespoons white sugar
- 1 tablespoon cornstarch
- 3 eggs whites
- 0.25 teaspoons cream of tartar
- 1 pinch salt
- 0.5 teaspoons vanilla extract
- 6 tablespoons white sugar

In a small saucepan, combine water, 2 tablespoons sugar, and cornstarch. Cook over low heat until clear, stirring constantly. Remove from heat.

In a large glass or metal bowl, beat egg whites, cream of tartar, and salt until mixture is foamy. Mix in vanilla, then gradually add the 6 tablespoons sugar, beating constantly until meringue forms soft peaks. Gradually pour in cornstarch mixture, beating until stiff. Spread over top of pie and seal to the crust. Brown in oven if desired.

This Italian Easter cookies (biscotti) recipe belonged to my Italian grandmother. She made these cookies every Easter, and I've since picked up where she left off and now make these cookies as part of our Easter tradition. I love the anise flavoring, but you can substitute almond extract and they're just as good. This is my favorite cookie to dip in coffee.

This is a delicious variation of macaroni cheese made with penne pasta, bacon, and garlic. The secret to the cheese sauce is constant stirring over low heat. Add the milk just a bit at a time and keep stirring!
