Instant Pot Cabbage and Beef Soup
This vegetable beef soup with cabbage is a great Instant Pot recipe for cleaning out veggies from your fridge. In my recipes, I use whatever ingredients happen to be in my fridge, but you can easily substitute and add cauliflower, celery, zucchini, etc. Make sure you have at least a 6-quart pressure cooker.
Aunt Connie's Coconut Cake
This coconut cake recipe was created by Aunt Connie and made on special occasions. It is as wonderful as she was, and I remember her every time I make it.
Sarah's Creamy Veggie Enchiladas
These enchiladas are full of fresh vegetables and my ace in the hole - cotija cheese. Sour cream makes a nice saucy filling. My vegetarian husband gives these 5 stars; I hope you like them, too! These go great with a side of black or pinto beans and a salad with chopped tomato and avocado. Enjoy!
