Blueberry Upside-Down Mini Cakes
This recipe for blueberry upside-down mini cakes is a nice way to use up some leftover blueberries.
Chicken Florentine Dip
This chicken Florentine dip is great for parties. It is something I have been making for years, it is quick, easy and can feed many! It is usually the first thing empty, and when I show up without it, I have many disappointed fans. Serve with tortilla chips for dipping.
Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
I loved a local chain restaurant's fish tacos so much, that I had to try to duplicate them. They combine flour tortillas filled with breaded, fried tilapia, layered with chipotle mayo, topped with napa cabbage, dressed with honey-cumin sauce, and served with pico de gallo, sour cream, chips, and salsa. You'll find them very refreshing and packed full of flavor!
