Everything in this mid-summer Italian bread salad recipe is fresh, except the bread. Use a loaf of artisan or rosemary bread that is a touch stale. If your bread is too fresh, toast it until about half as dried and crunchy as a crouton.

Ingredients

  • 1 clove garlic , peeled
  • 1 loaf Italian bread , 1 pound
  • 2 cups chopped fresh basil
  • 1 cup chopped tomatoes
  • 1 cup peeled , seeded, and chopped cucumber
  • 1 cup chopped red onion
  • 2 tablespoons chopped fresh thyme
  • 1 clove garlic , minced
  • 0.25 cups olive oil , or as needed
  • 2 tablespoons balsamic vinegar , or as needed

Instructions

    Gather all ingredients.

    Rub peeled garlic clove around a wooden salad bowl.

    Pull apart or cut bread into bite-sized pieces.
