A fast DIY breakfast for the road that's made in minutes with scrambled egg, salsa, and cheese wrapped up in a tortilla.
Ingredients
- 2 large eggs
- 2 tablespoons salsa
- 1 slice reduced-fat American cheese
- 1 tortilla

Gather all ingredients.

Spray a cereal bowl with nonstick cooking spray. Crack the eggs into the bowl, add the salsa, and stir.

Microwave on high for 1 minute, stir, and cook for another minute or until the mixture firms up.

Place cheese in center of tortilla and top with egg mixture.

Wrap it all up like a burrito and head for the car!

This is a tasty scramble of sausage and eggs with cheese. Great for a Sunday morning family breakfast! You may use as much of whatever type of cheese you prefer for this recipe.
No-Bake Snack Mix
This is my mom's no-bake snack mix recipe, and it's so much better than other snack mix recipes out there. It's tangy, spicy, and so delicious! I make it for my coworkers for Christmas and always get requests for the recipe. You can vary the proportion of the snacks you use based on what you like. Add more oyster crackers or fewer pretzels, etc. For reference, this recipe probably makes enough snack mix to fill two 1-gallon resealable bags. This also freezes well to stay fresh longer.
Buffalo Chicken Wing Sliders
These burgers are soft and moist. They can also be formed to make larger burgers. Serve with blue cheese dressing for a nice touch. Use more wing sauce for a hotter, more spicy burger.
