Buffalo Wing Stuffed Burgers
I got the idea for this recipe when challenged to a burger cook-off. The whole lot of us like chicken wings, so I figured I'd translate that into a burger. I was was not only the winner, but also the only one to use chicken.
Brownie Mix-Black Bean Brownies
You won't believe how chocolate-y and moist these brownies are. I like to make them in mini muffin cups with mini foil cupcake liners. Dust them with powdered sugar and you have a decadent treat with the benefit of more protein, more fiber, and fewer fat calories.
Kid-Pleasing Sloppy Joes
This is one of my kids' favorite recipes! I could make this five times in a row and they'd never get tired of it. It's easy to make and a real quick, hot meal for those busy nights. I will add cheese on top of these kid-friendly Sloppy Joes or warm the rolls in the oven. I occasionally add mild banana peppers on top for my husband since he is a fan of spicy things.
