This Japanese-style broiled miso salmon is an easy recipe I came up with at the request of my family. It tastes just like some we've had at Japanese restaurants. Serve with sticky white rice and a light salad.
Ingredients
- 2 salmons fillets , 1 1/2-pound
- 1 cup miso paste
- 0.5 cups brown sugar
- 0.5 cups prepared soy-ginger salad dressing
- 0.25 cups sake
- 0.25 cups water
- 3 tablespoons seasoned rice vinegar
- 2 tablespoons sesame seeds
- 1 teaspoon sesame oil
Instructions
-
1
Preheat the oven to 400 degrees F (200 degrees C).
-
2
Fill a large skillet with about 1 inch of water and bring to a boil. Poach fish just until cooked on the outside, about 2 minutes per side. Transfer fillets to a broiler pan.
-
3
Stir together miso paste, brown sugar, salad dressing, sake, water, rice vinegar, sesame seeds, and sesame oil in a small bowl. Spread over the tops of the salmon fillets.
-
4
Bake in the preheated oven until almost cooked through, about 15 minutes. Switch the oven to broil, and broil until the top is browned and bubbly, about 5 more minutes. Cut fillets into portions to serve.

Sweet and Sour Meatballs
This sweet and sour meatball recipe came from my mother-in-law. I got it shortly after I was married and now it is a favorite of our kids. I like to serve it over rice.
Carrot Pulp Muffins
Looking at the mound of carrot pulp from my juicer and then at my 2 1/2-year-old daughter (who loves bread) inspired me to experiment with carrot pulp recipes. This muffin is dense, healthy, and can be tweaked to suit your tastes. As is, it is not sweet, but you could certainly add mashed ripe banana or pineapple. Once out of the oven, sprinkle the tops with cinnamon sugar while they are still hot.
Pork and Udon Noodle Stir-Fry
I've been experimenting with my new wok and I think this stir-fried udon meal came out pretty good. My husband liked it, so it can't be that bad. It is a relatively easy recipe.
