A delicious Japanese miso soup with shiitake mushrooms and tofu.
Ingredients
- 4 cups vegetable broth
- 4 shiitakes mushrooms , thinly sliced
- 0.25 cups miso paste
- 4 teaspoons soy sauce
- 0.33 cups diced firm tofu
- 2 greens onions , trimmed and thinly sliced

Heat vegetable broth to a boil in a saucepan. Add mushrooms; reduce heat to low, and simmer 4 minutes.

Whisk miso paste and soy sauce together in a small bowl; stir into broth along with tofu and continue cooking 1 minute more. Divide soup among bowls; top with green onions to serve.

This is a low-fat, low-cal soup that's incredibly filling and delicious. I eat this at least once a week! I don't know how it tastes cold, though. Don't be afraid to vary the proportions of various foods on your own!
