These Mississippi mud potatoes are just as delicious as a loaded baked potato, but with the convenience of baking everything together.
Ingredients
- 2.5 cups diced potatoes
- 0.75 cups shredded Cheddar cheese
- 0.5 cups bacon
- 0.5 cups onion
- 0.33 cups mayonnaise
- 2 garlics cloves
- salt and freshly ground black pepper to taste
- 0.25 cups green onions

Preheat the oven to 325 degrees F (165 degrees C). Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.

Combine potatoes, cheese, bacon, onion, mayonnaise, garlic, salt, and pepper in a large bowl. Transfer to the prepared dish.

Bake until potatoes are fork tender, about 1 1/2 hours. Top with green onions.
