Momma's wheat germ cookies are good! You'll be giving out this recipe forever! Be sure to leave the cookies on the cookie sheet for at least one minute after removing them from the oven; this allows them to flatten and firm up. Also, make sure you use rolled oats, not instant! Please don't let the list of ingredients scare you away from this recipe.

- 1 cup butter , softened
- 1 cup white sugar
- 1 cup brown sugar
- 2 large eggs
- 1.5 teaspoons vanilla extract
- 1.5 cups rolled oats
- 1 cup wheat germ
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chopped pecans
- 1 cup flaked coconut
- 1 cup chopped pitted dates

Preheat the oven to 325 degrees F (165 degrees C).

Beat butter, white sugar, and brown sugar together in a large bowl with an electric mixer until smooth. Beat in eggs, one at a time, then stir in vanilla. Whisk oats, wheat germ, flour, baking powder, baking soda, and salt together in a separate bowl; stir into butter mixture. Stir in pecans, coconut, and dates.

Drop rounded spoonfuls of dough onto ungreased cookie sheets.

Bake in the preheated oven until lightly browned and edges are set, 8 to 10 minutes. Cool cookies on cookie sheets for 1 to 2 minutes before transferring to a wire rack to cool completely.
