My mom makes the best waffles and I thought I'd share the recipe with the world!
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons white sugar
- 1 teaspoon salt
- 2 cups milk
- 2 eggs
- 2 tablespoons vegetable oil

In a large bowl, stir together flour, baking powder, sugar and salt. Add milk, eggs and oil; mix well.

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.

Easy Flourless Banana Flax Pancakes
I've done a lot of experimenting with flourless pancakes and came up with this version recently. So far these are my favorite! They taste best with maple syrup and a dollop of whipped cream on top if you have some handy. My kids like to use cookie cutters to make shapes out of these pancakes before they gobble them up. Enjoy!
