A good friend, Mrs Welch, gave me this recipe in the mid 1970's. It's fail-proof, it's delicious, and it's quick-and-easy using ingredients I usually have on-hand.
Ingredients
- 12 unbakeds tart shells , 3 inch
- 0.75 cups raisins
- 0.5 cups chopped walnuts or pecans , Optional
- 0.5 cups brown sugar
- 0.25 cups corn syrup
- 3 tablespoons butter , softened
- 1 egg , beaten
- 1 tablespoon vanilla extract
- 0.13 teaspoons salt

Preheat oven to 350 degrees F (175 degrees C).

Place tart shells on a baking sheet; sprinkle raisins and walnuts evenly between shells.

Whisk brown sugar, corn syrup, butter, egg, vanilla extract, and salt together in a bowl; pour mixture evenly over raisins and walnuts into tart shells.

Bake in the preheated oven until filling is set and crust is golden, about 35 minutes.

I realize making this pate may seem like quite a production, but if you enjoy charcuterie, this would make for a very fun, beautiful, and quite delicious project.
Macaroni Salad with Pickles
This recipe is easily multiplied for a crowd. Everyone in my family asks me to bring this to our functions. I even make it for weddings. Sometimes I use a mixture of different kinds of pasta, especially if I only have a little of this kind or that. Depending on what type of macaroni used, more dressing may be required. The recipe calls for red onion, but sweet onion is great, too.
Gluten Free Pie Crust
This recipe yields is a wonderful gluten-free pie crust I made! I suspect you could use Rice Krispies as well! It also works without the cocoa!
