This Neiman Marcus chicken salad, a copycat of the department store's signature cafe recipe, is quick to make and very satisfying as a cold supper. Serve over lettuce or fill a sandwich.
Ingredients
- 4 cups cooked chicken
- 1 cup chopped celery
- 1 cup red grapes
- 0.5 cups sliced almonds
- 1 tablespoon fresh parsley
- 1 cup mayonnaise
- 1 teaspoon kosher salt
- 0.5 teaspoons black pepper
- 0.5 cups heavy cream

In a large bowl, combine chicken, celery, grapes, almonds, parsley, mayonnaise, salt, and pepper. Stir until well mixed.

In a separate bowl, whip heavy cream until soft peaks form. Gently fold whipped cream into the chicken mixture until fully incorporated. Taste; adjust seasoning if desired.
