Pecan pie made with honey instead of white sugar.
Ingredients
- 1 cup honey
- 3 large eggs , beaten
- 1 cup chopped pecans
- 3 tablespoons butter
- 1 teaspoon vanilla extract
- 1 pinch ground nutmeg
- 1 refrigerated pie pastry , 9 inch

Preheat the oven to 325 degrees F (165 degrees C). Press pastry into a 9-inch pie pan.

Bring honey to a boil in a saucepan. Remove from the heat and quickly whisk in eggs. Stir in pecans, butter, vanilla, and nutmeg. Pour into the prepared pie pan.

Bake in the preheated oven until set, about 25 minutes.

I use this blueberry waffle recipe to help use up the massive amount of berries I pick each summer. I am fortunate to have four blueberry bushes in my backyard, and they supply me with fresh blueberries all summer.
Jamaican Curry Powder
This is a genuine Jamaican curry powder recipe without hot pepper, which should be added separately to any dish. You can also use powdered versions of any of the ingredients, but for better flavor use whole seeds. For real Jamaican flavor, you will usually add Scotch bonnet or habanero chile peppers to your recipes. However, if you want to add heat directly to the powder, add 2 to 4 tablespoons cayenne powder to the mix, depending on your taste.
