This one-pan creamy baked salmon and orzo features salmon filets on a bed of orzo and vegetables in a cream and Boursin sauce. It all bakes in a single casserole dish, so there's minimal cleanup.
Ingredients
- cooking spray
- 1 cup dry orzo
- 1 cup corn kernels
- 4 zucchini , sliced into coins
- 1 small onion
- 1.5 cups chicken bone broth
- 0.25 cups milk
- 0.25 cups heavy cream
- 1 package Boursin® Garlic & Fine Herbs , 5.2 ounce
- 2 tablespoons olive oil
- 4 salmons fillets , 3-ounce
- 1.5 teaspoons salt
- 2 teaspoons Cajun seasoning
- lemon wedges , optional
Instructions
-
1
Preheat the oven to 400 degrees F (200 degrees C). Lightly spray a 9x13-inch baking dish with nonstick spray.
-
2
Combine orzo, corn, zucchini, and onion in the prepared baking dish; crumble Boursin cheese over the top. Pour in bone broth, milk, and 1 tablespoon olive oil. Season lightly with 1/2 teaspoon salt; stir to combine evenly. Nestle in salmon fillets. Brush salmon with remaining olive oil and season with remaining salt and Cajun seasoning. Cover the pan tightly with foil.
-
3
Bake in the preheated oven for 20 minutes. Uncover, gently stir orzo around the edges, leaving salmon filets intact, and return to the oven uncovered. Bake until orzo is tender and creamy and salmon flakes easily with a fork, 10 to 15 minutes. Squeeze lemon juice over salmon, and serve immediately.

Gluten-Free Irish Soda Bread
Searching for recipes for a gluten-free diet can be challenging during the holidays. Here is a recipe for Irish soda bread that I have adapted over time for St. Patrick's Day. The recipe calls for rice and tapioca flour instead of wheat and it still tastes yummy! Good if wrapped and left overnight, but I think it tastes great right out of the oven. Serve with butter or jam.
Carrot Soufflé
This carrot soufflé makes an excellent side dish, or great to serve with brunch.
Chef John's Pizza Rustica
Some people describe pizza rustica as an Italian meat-filled quiche, but I think this traditional Easter recipe is way closer to a savory cheesecake filled with a massive amount of goodness. The light, flaky crust holds together an embarrassment of riches — sausage, smoked ham, salami, and pepperoni, plus ricotta, mozzarella, and Pecorino Romano cheeses. It's definitely not like pizza!
