Tired of the flat flavor of store bought orange gelatin? You can make your own with this simple recipe of gelatin, orange and lemon juice and zest and sugar.
Ingredients
- 4.5 teaspoons unflavored gelatin
- 0.25 cups cold water
- 1 cup boiling water
- 1.75 cups orange juice
- 2 teaspoons grated orange zest
- 1 teaspoon grated lemon zest
- 0.75 cups white sugar
- 0.5 cups lemon juice
- 1 pinch salt

In a medium bowl, soak gelatin in cold water for 5 minutes. Add boiling water, stirring until gelatin dissolves.

To 3 tablespoons of the orange juice add the orange and lemon zest; set aside for 5 minutes.

Strain the zest out of the orange juice and discard the zest. To the gelatin add all of the orange juice, sugar, lemon juice and salt. Stir until well blended and set aside to cool.

Pour cooled mixture into a 4-cup mold which has been rinsed in cold water. Cover and refrigerate to congeal.

Italian Lemon Coffee Cake
"Torta al limone," as this Italian lemon coffee cake is known in Italy, is a recipe I received from my husband's "Zia Pina." I modified her recipe to add the sliced almonds and drizzled confectioners' sugar glaze on top. This lovely cake goes great with a cup of coffee or cappuccino!

We're strong believers in sleeping in and brunching on the weekends (we didn't work hard all week for nothing!), so it's only natural that we treat ourselves to one of our favorite brunch foods: the classic pancake.
