Ingredients
- 2.5 pounds baking potatoes
- 1 teaspoon vegetable oil
- 1 tablespoon white sugar
- 1 teaspoon salt
- 1 pinch ground cayenne pepper

Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.

In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.

Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

This slow-cooker jambalaya (vegan) recipe is good to freeze and throw in the slow cooker on a busy day. I prefer the rice cooked separately. You can substitute Creole seasoning for Cajun seasoning and bok choy for celery if desired.
Zoodle Vegetable Bake
Zoodles and broccoli mixed with mushrooms, peppers, and other yummy vegetables topped with fresh mozzarella cheese and then baked altogether create a wonderful veggie casserole that is just busting with flavor. This dish was a little soupy; I just served it using a slotted spoon and it worked perfectly.
