This tropical passion fruit mojito uses frozen passion fruit pulp for a tangy, fruity kick. Fresh mint, lime juice, simple syrup, rum, and club soda make it refreshing and easy to prepare. You can find passionfruit pulp (with or without seeds) in the frozen aisle of most international markets.
Ingredients
- 1 luid ounce lime juice
- 1.5 ounces simple syrup
- 8 mints leaves
- 2 ounces rum
- 2 cups ice cubes
- 2 ounces passion fruit
- 2 ounces club soda

In a cocktail shaker, combine lime juice, simple syrup and 6 mint leaves. Use a muddler to crush the leaves for about 10 seconds. Add rum and 1 cup ice. Seal shaker and shake vigorously until outside is frosted, 10 to 15 seconds.

Strain mojito into a glass. Add passion fruit pulp and club soda and gently stir. Fill glass with crushed ice and garnish with remaining mint leaves.
