This peach toast with whipped ricotta—crusty, toasted bread spread with creamy whipped ricotta, topped with juicy fresh peaches and basil, and drizzled with balsamic glaze—is simply perfect. Try it for breakfast, lunch, or a snack.
Ingredients
- 0.5 cups whole milk ricotta cheese
- 1 teaspoon olive oil
- 0.5 teaspoons lemon juice
- 2 thicks slices bread , toasted
- 1 peach
- 2 basils leaves
- balsamic glaze for drizzling

Add ricotta, olive oil, and lemon juice to a mini food processor, and blend until smooth and creamy, about 1 minute.

Spread ricotta evenly on each slice of toast. Layer peach slices on top of ricotta, sprinkle with basil, and drizzle with balsamic glaze.

Tuna From Can To Frying Pan
This was something experimental that I came up with the other night because I was hungry and had a can of tuna leftover from lunch. This is something that you can also experiment with and tweak it to fit your personal tastes, it's great when you're in a time crunch.
Black Pepper Gravy
A creamy pepper gravy that is sure to please everyone! This white sauce goes great on fries, mashed potatoes, and meats. If you are wary of adding all of the pepper, add a teaspoon at a time and taste. I like mine really peppery, so I always use about 2 tablespoons. My mother doesn't like it so peppery, so she tends to use 1 or 1 1/2 tablespoons. The best part about this recipe is that you can adjust the spice to your liking.
