My mom made these peanut butter popcorn balls every Halloween when I was a kid and it was still okay to give out homemade treats. Now I make it as a moist and chewy fall snack. You can make it into balls or leave it loose and serve it like caramel corn if you prefer.
Ingredients
- 1 cup brown sugar
- 0.67 cups white corn syrup
- 0.25 cups butter
- 1 cup peanut butter
- 20 cups popped popcorn
Instructions
-
1
Combine brown sugar, corn syrup, and butter in a large saucepan over medium heat; cook and stir until mixture comes to a rolling boil. Remove from the heat, add peanut butter, and stir until smooth.
-
2
Place popcorn into a large bowl. Pour peanut butter mixture over top and toss until evenly coated. Use buttered hands to form mixture into about 16 balls. Arrange balls on a waxed paper-lined baking sheet and let set for at least 30 minutes.

Grandma's Chocolate Zucchini Bread
This super-easy zucchini bread is so moist and chocolaty that it's easy to forget it's made with zucchini. Even my husband, who isn't usually a fan of zucchini, absolutely loves it!
Slow Cooker Chicken Gumbo with Shrimp
This crockpot gumbo recipe is as easy as can be and practically makes itself. Just dump the chicken and vegetables in a slow cooker, toss in shrimp a few minutes before serving, and voilà! Dinner is served. When you use a slow cooker liner, there's virtually no cleanup to worry about afterward. Plus, with no roux to make and no pots to scrub, you'll have extra time to sit back and relax with your family.

I've been making this blueberry cake for years. It works well as either a coffee cake or made into muffins.
