Classic lemon curd that's wonderfully tart, sweet, and smooth. Delicious spread on scones or used to fill cakes, cupcakes, tarts, and more!
Ingredients
- 0.75 cups fresh lemon juice
- 0.75 cups white sugar
- 0.5 cups unsalted butter , cubed
- 3 large eggs
- 1 tablespoon grated lemon zest
Instructions
-
1
Gather all ingredients.
-
2
Combine lemon juice, sugar, butter, eggs, and lemon zest in a 2-quart saucepan.
-
3
Cook over medium-low heat, whisking constantly to prevent the eggs from curdling, until mixture starts to get thick and bubbles rise to the surface, about 5 to 6 minutes.
-
4
Remove saucepan from the heat; transfer lemon curd into a large bowl and place a piece of plastic wrap on top to prevent a skin forming. The curd will thicken more as it cools. Store in the refrigerator.

Grain Bowl with Blackened Shrimp, Avocado, and Black Beans
This blackened shrimp salad bowl is big and bold in flavor and makes for a low-calorie meal packed with shrimp, brown rice, corn, crisp bell pepper, black beans, and avocado. Easy to create with ingredients you probably already have in your kitchen/pantry. If you prefer to serve burrito-style, just heat up some flour tortillas and wrap it all up. Either way, it's delish!
Tuscan Fish Stew
I spent a few days in Florence about 30 years ago, and while I don't remember much, I do recall my surprise at how delicious the Tuscan fish stew was. What I found so interesting was how herbs like oregano, sage, and rosemary, which I'd only associated with meat, were also used with seafood. Also, FYI just in case any old-school Tuscans are coming over: I hear that for this to qualify as an official Italian fish stew you need use at least 5 different types of seafood, which is both insane and adorable. Serve with crusty bread.
Avocado Stuffed Yams
This is a simple and filling recipe. The cool and spicy avocado topping is a pleasant contrast to the hot sweet yams.
