A fruit and vegetable salsa with pineapple and corn! Serve over chicken, fish, or pork, or by itself as a side dish.
Ingredients
- 1 cup finely chopped fresh pineapple
- 0.5 cups diced red bell pepper
- 0.5 cups diced green bell pepper
- 1 cup frozen corn kernels , thawed
- 1 , 15 ounce
- 0.25 cups chopped onions
- 2 greens chile peppers , chopped
- 0.25 cups orange juice
- 0.25 cups chopped fresh cilantro
- 0.5 teaspoons ground cumin
- salt and pepper to taste

In a large bowl, toss together pineapple, bell peppers, corn, black beans, onions, chile peppers, orange juice, and cilantro. Season with cumin, salt, and pepper. Cover and chill in the refrigerator until ready to serve.
