This is a white cake, that you poke holes in and pour warm fruit flavored gelatin over it and chill. It has a whipped topping frosting.
Ingredients
- 2 whites cake layers , 8 or 9 inch
- 2 packages fruit flavored Jell-O® mix , 3 ounce
- 2 cups boiling water
- 3.5 cups frozen whipped topping , thawed

Place cake layers, top side up in two clean 8 or 9 inch round cake pans. Prick each cake with a utility fork at 1/2 inch intervals.

Dissolve gelatin in boiling water. Carefully spoon dissolved gelatin over cake layers. Chill cakes for 3 to 4 hours.

Dip one cake pan in warm water for 10 seconds, then unmold onto a serving plate. Top with about 1 cup of the whipped topping. Dip the other cake pan in warm water for 10 seconds and unmold second cake layer, placing carefully on top of the first cake layer. Frost top and sides with the remaining whipped topping. Chill.

Pumpkin Funnel Cakes
After having this special treat at a Pennsylvania country fair I just had to try and recreate this for my family. I believe I came pretty close, and I hope you enjoy them as much as we do!
Mandazi (African Donuts)
Mandazis are amazingly soft, triangle-shaped donuts famous in East Africa, where I am from. They are excellent with a cup of tea or coffee. The dash of cardamom adds an authentic taste, making them different from regular donuts. You can serve them with honey or jam. Mandazis can also be served with curry, which is how we like them.
Cheesy Apple and Oat Meatloaf
No one in our household liked meatloaf until I threw this together one day. Now even my picky 8-year-old will eat it! It is really moist which is why everyone likes it but has a bit of crust on outside.
