Gochujang Caramel Cookies
These gochujang caramel cookies, adapted from a sugar cookie marbled with Korean chili paste and invented by cookie genius Eric Kim of the New York Times, are spicy-sweet, savory, and have the perfect chewy texture. They're my new favorite cookie.
Raspberry-Lemon Bars
My raspberry-lemon bars are perfect for summer and easy to make. I start with a shortbread crust, then double the lemon filling that you'll find in most recipes, adding lemon oil and zest for extra flavor. Then let them cool, dust with powdered sugar, and top with fresh summer raspberries. Also good served with fresh whipped cream or vanilla ice cream.
Healthier Chicken Enchiladas
I've always liked this healthy chicken enchilada recipe because it is quick and easy. I'm always looking for ways to cut out excess fat so I use reduced-fat cheese and sour cream. I also like to add fiber to make the meal a little healthier for my family so I add black beans and some bell peppers. This also adds color! To make it super-healthy I use whole wheat flour tortillas. And it still tastes just as delicious!
