These potato crunchy tenders are a quick meal to make. I was trying to come up with something different than pizza on football practice nights, so I came up with this.
Ingredients
- 0.5 cups vegetable oil for frying
- 1.5 cups milk
- 1 egg
- 1 package garlic flavored instant mashed potatoes , 7.6 ounce
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1.5 pounds chicken tenders
Instructions
-
1
Heat oil in a large skillet over medium heat.
-
2
Meanwhile, beat together milk and egg in a shallow bowl. Stir together instant mashed potatoes, salt, and pepper in another shallow bowl.
-
3
Stir chicken tenders with milk mixture to coat thoroughly, then shake off excess milk and dip each tender into potato flakes.
-
4
Cook breaded tenders in hot oil until golden brown, 7 to 10 minutes. Drain on a paper towel-lined plate.

Sous Vide Dill Pickles
These sous vide dill pickles are deliciously crunchy and will last at least a year. People are always asking me when I'm going to make them again. I'd say this recipe makes enough to fill a gallon-sized jar; however, I alter it to accommodate the number of fresh cucumbers I have.
