- 0.75 cups canned pumpkin
- 4 ounces mascarpone cheese
- 0.5 cups ricotta cheese
- 0.25 cups instant vanilla pudding mix
- 1 teaspoon pumpkin pie spice
- 0.5 cups heavy whipping cream
- 12 large cannoli shells
- 1 tablespoon sprinkles , or as desired
- 1 teaspoon confectioners' sugar for dusting
Instructions
-
1
Stir 1 cup confectioners' sugar, pumpkin, mascarpone cheese, ricotta cheese, pudding mix, and pumpkin pie spice together in a bowl until smooth.
-
2
Beat cream in a chilled bowl with an electric mixer until stiff peaks form; fold into pumpkin mixture. Spoon pumpkin mixture into a resealable plastic bag and snip a 3/4-inch hole in the corner. Pipe pumpkin mixture into each cannoli shell. Garnish the ends with sprinkles and confectioners' sugar.

Asparagus Pasta Bake
This asparagus pasta bake is a slightly fancier version of the baked ziti classic.
Sweet Bourbon Sipper
I fell in love with a drink at our local bourbon bar, so I came home to try and make it myself. Combined with lime and cherry flavors, the bourbon flavors stay strong. This recipe calls for dark Morello cherries, but feel free to try it with Amarena cherries or the cherries of your choice.
Potato Scones
These tattie scones are similar to potato pancakes. From an Irish and Scottish background, these are the perfect side with any breakfast meal and are a family favorite! Add onion, pepper, or any other spices for flavor. Serve with butter. Enjoy.
