Mushroom ceviche can be served with crackers or chips, a quick vegan dip that is very tasty. This recipe uses canned mushrooms which is why it takes so little time. Ingredients

  • 6 , 4 ounce
  • 1 small white onion , chopped
  • 0.5 cups chopped cilantro leaves
  • 0.5 cups ketchup
  • 3 limes , juiced
  • salt to taste
  • 2 avocadoss - peeled , pitted, and chopped

Instructions

    Combine mushrooms, onion, and cilantro in a glass bowl. Add ketchup and lime juice; mix well. Season with salt. Chill for 30 minutes. Sprinkle with chopped avocado before serving.
