This raspberry lemon drop martini is similar to a standard lemon drop (which is, without a doubt my go-to drink on hot summer days!), but it's made with muddled fresh raspberries. I was inspired to create this recipe when my kids threw fresh home-grown raspberries into their lemonade. Tart, sweet, and refreshing, this cocktail is a winner.
Ingredients
- 10 freshs raspberries , or more to taste, divided
- 2 fluids ounces lemon juice
- 2 teaspoons white sugar
- 2 fluids ounces vodka
- 1 cup ice , or as needed
- 1 wedge lemon

Place 8 raspberries, lemon juice, and sugar into a cocktail shaker; mash well with a cocktail muddler. Add vodka and ice. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled martini glass; garnish with a lemon wedge and remaining 2 raspberries.

Healthier Poppy Seed Salad Dressing for 2
I'm always trying to make lighter salad dressings. Recently, I learned the trick of using water and cornstarch to replace most of the oil in dressing recipes. This version is much healthier and soo yummy!
Baked Spaghetti Squash
Baked spaghetti squash is easy to make โ just cut the squash in half and bake until the skin is easily pierced with a fork. It's great as a low-carb pasta substitute or delicious added to salads. I often just eat it with some crumbled feta or Parmesan cheese on top.
