- 1 tablespoon lemon juice
- 2 teaspoons grated onion
- 1 tablespoon chopped fresh parsley

In a medium bowl, mix together salmon, cream cheese, horseradish, lemon juice, and onion. Chill if necessary until firm enough to handle, then form into a ball. Roll in parsley and pecans if desired. Refrigerate until serving. Serve with assorted crackers.

Jamon Borracho (Drunken Ham)
This ham is to die for. Sounds to difficult to make but it is very simple. I serve this dish during Easter or Christmas, or whenever I'm in the mood for ham. The flavors of the Dijon mustard and the brown sugar are intensified with the orange rum. Igniting rum will help glaze the ham and melt any remaining sugar, plus it looks cool, too.
Potato Waffles
These savory potato waffles are a quick and delicious way to use up those leftover mashed potatoes. You will need a waffle iron. These are basically potato pancakes (a.k.a. latkes) but without all the greasy clean-up and calories from pan-frying. I usually serve them with fish or chicken and sautéed apples.
Simple Swiss Chard
Swiss chard cooked with garlic and balsamic vinegar. Quick and delicious!
