This fettuccine with shrimp, tomatoes, and spinach cream sauce is full of bright flavors, fresh-tasting, and cooks quickly. We love it with a simple tossed salad and crusty bread.
Chili with Quinoa
My husband said this is the best chili yet! Plus it is so easy to make! To serve, put a small amount of pasta in a bowl and spoon in chili with quinoa. Add a dollop of sour cream (vegan or regular) and a sprinkle of chives for garnish. Enjoy!
Aaron's Famous Vegetarian Nachos
These vegetarian nachos are very satisfying and crave-worthy! My husband (the recipe creator) uses refried beans, jalapeño salsa, and pepper Jack cheese, but you can add your favorite toppings or whatever you like. Also good topped with sliced pepperoncini or diced jalapeño.
