This Ritz cracker chicken casserole is a classic creamy chicken casserole, great for a weeknight dinner. Rotisserie chicken makes it easier, and the buttery cracker topping provides that familiar crunch.
Ingredients
- 8 cups shredded rotisserie chicken
- 2 cans cream of chicken soup , 10 1/2 ounce
- 1 cup scallions
- 1 container sour cream , 8 ounce
- 0.5 cups chicken broth
- 1 tablespoon Dijon mustard
- 1.5 teaspoons garlic powder
- 1.5 teaspoons onion powder
- 1.5 teaspoons black pepper
- 1.5 teaspoons kosher salt
- 2 sleevess buttery round crackers
- 0.5 cups unsalted butter

Gather all ingredients.

Preheat the oven to 350 degrees F (175 degrees C). Stir together shredded chicken, cream of chicken soup, scallions, sour cream, chicken broth, mustard, garlic powder, onion powder, black pepper, and salt in a 9x13-inch baking dish. Spread into an even layer.

Stir crackers and butter together in a bowl until coated, and sprinkle evenly over chicken mixture.

Bake in the preheated oven until bubbly and crackers are golden brown, about 30 minutes. Garnish with sliced scallions.
