Seven Layer Salad
This 7-layer salad looks great in a large glass bowl. I usually make it with bacon, lettuce, red onion, pea, Cheddar cheese, and cauliflower but you can vary the type of onions, cheese, etc. There's never too much because everybody loves it!
Chicken and Quinoa Paella
Traditional paella is made with rice. This recipe replaces the rice with quinoa, which is very good at absorbing the flavor of whatever it cooks in. This recipe simplifies cooking paella by foregoing the paella pan and using a common baking pan, the perfect size for parties and potlucks. Garnish with lemon wedges.
Blue Cheese Dip
This blue cheese dip is smooth and creamy. Blue cheese crumbles kindly lend their distinctive flavor to this simple dip. Serve with corn chips.
