Manhattan Filet with Pan Sauce Bordelaise
This simple technique not only provides you with a NY strip steak that eats like a filet mignon but the trimmings are used to make a world-class pan sauce. Even if a faux-bordelaise isn't your cup of tea, you can always save the scraps for a Sunday sauce or meatballs. The overnight dry-aging step is optional but does add a little something extra to the final product.
Popa's Pickled Eggs
Popa's simple recipe for pickled eggs makes a great snack along with pretzels. For hotter eggs, pierce the yellow chile peppers with a sharp knife or add other hot peppers.
Slow Cooker Chicken Tortilla Soup
This chicken tortilla soup tastes better than anything you can get at a restaurant. It's healthy, too! Don't let the long list of ingredients fool you. All you do is dump everything into the slow cooker and walk away. Garnish with grated Cheddar, avocados, and a splash of fresh lime juice.
